This is the final episode of three episodes that focused on French Cuisine. In this episode, I show how to make one of my favorite recipes: Ratatouille. Ratatouille is a provincial French dish. It is a hearty vegetable stew that features eggplant. It is very delicious and a lot easier to make than you might think (though there are a lot of vegetables to prepare). This dish can be served as a vegetarian entree or as a sidedish. In my recipe, I actually add some Parmesan and Mozzarella Cheeses to the top, which finishes off the dish nicely. Here are the Ingredients that you will need: 1 Lg Eggplant 1 Red Onion 2 Medium Zucchini 2 Bell Peppers (any two colors) 8oz of Sun Dried Tomato Vinaigrette (half bottle) 16oz Can of Diced Tomatoes 4 Garlic Cloves (or 2 Tsp. Garlic Powder) Salt, Pepper, Parsley, and Basil (to taste) 2 Tbs. Grated Parmesan Cheese 1 Cup of Shredded Mozzarella Cheese *Serves about 6 people as an entree* (Note: You can sprinkle some more parsley on top just before serving for decorative purposes.)
